I’ve always prided myself on making relatively easy and quick meals - most of my recipes come together in less than 30 minutes, especially if you use my tips for prepping your produce when you bring groceries home. And yet, despite feeling like the one-minute-man of food bloggers, my number one request is for quick and easy weeknight meals.

Look, I get it! Most people have young kids and busy jobs. Even if you did have an hour free, you don’t want to spend that time cooking dinner for your ungrateful family. You want to spend it looking at your phone in your car in the garage. LIKE A NORMAL PERSON.

So, here’s what I’m doing: I’m gonna share some of my REAL LIFE weeknight dinner with you over the next few weeks. These are real, un-stylized plates that I actually ate as part of our family dinner. They’re not sexy, or even creative, but they are quick to pull together, nutritious, and most importantly, they taste good. To kick this series off, I wanted to share a quick and easy dinner we’ve had twice in the last week because it’s that delicious.

 
 

This is so stupid: it’s just taco meat on top of sweet potato fries with whatever toppings you’re feeling. My recipe calls for homemade sweet potato fries. Before you freak out, it’s basically just slicing a sweet potato - it’s not like it’s hard. But if even that is too much for you, you can always use a frozen variety. ALSO. My recipe includes an optional portion of liver meat, because I’m extremely focused on getting more nutrition into our family diet, and while I strongly encourage you do the same (you can read about the benefits of eating liver in this post), you can leave that out as well. Ultimately, this recipe is super versatile since you can use any protein you want: ground turkey, impossible meat, and even shrimp.

Nachos are basically the Cher of bar food: everyone is a fan, they have tons of personality, and they never get old! This is a fun twist on a garbage classic that comes together in under 30 minutes with shit you probably have on hand!

Sweet Potato Fry Nachos

Sweet Potato Fry Nachos

Yield: 4 servings

Ingredients

Instructions

  1. Turn oven to 425° F to preheat.
  2. Line a baking sheet with foil. Place sweet potato fries on the baking sheet and toss with the olive oil and big pinch of salt. Spread fires out into one even layer. When oven is preheated, bake for 20-25 minutes, tossing fries about half way through.
  3. While fries bake, make the beef. Bring a large pan to medium-high heat and add the beef and liver (if using). Once meat is browned and cooked through, add onions and cook until softened. Add taco seasoning and follow the instructions for preparing on the package.
  4. When fries are finished, place a heap of fries onto a plate, top with beef and whatever toppings you're using!
