Quick & Easy Dinner Idea: Spiced Chicken Thighs with Avocado Crèma

One of the things I always have on hand for quick and easy meals are chicken thighs. Except this week when I had to make this dinner. But that’s only because I eat chicken thighs so often!! Not only is dark meat the superior part of the bird, but it’s also hard to fuck up and endlessly versatile. Here’s a few quick and easy chicken thigh ideas that have literally nothing to do with this recipe:

  • Cube and then simmer in a good quality jarred Tikka Masala sauce and serve over cauliflower rice.

  • Drizzle with olive oil, salt and pepper, bake at 350 for 20-ish minutes and then slice and serve over a Caesar salad.

  • Broil grilled chicken thighs topped with marinara and mozzarella, then serve with fresh basil over red lentil pasta.

 
 

But a list of ideas without ingredients and instructions isn’t what you’re here for. You’re here because I bullied you on my Instagram stories, probably.

For the past month, I’ve been sharing quick and easy recipes demanded by you, the readers. But I believe that just because a meal comes together with minimal effort doesn’t mean it should be minimal flavor, which is why these spiced chicken thighs with avocado crèma are the perfect change of pace for a weeknight meal.

 
 

The recipe for the avocado crèma makes a generous portion - more than you’ll probably need for one meal, so don’t be afraid to use it as a salad dressing or shrimp marinade for another meal! I served mine on top of this binge-worthy broccoli slaw, but you can also just do a bed of arugula with olive oil, lemon, and parmesan if you’re short on time (or ingredients). And if you’re not into chicken, swap it out for fish, pork, or even beef (or tofu, if you’re like that). Here’s the thing: you do you.

Spiced Chicken Thighs with Avocado Lime Crema and Broccoli Slaw

Yield: 4-6

Ingredients

Chicken Thighs
Lime Avocado Crema
Broccoli Slaw

Instructions

Make the Broccoli Slaw
  1. Whisk all ingredients except the slaw in a large bowl. Taste it, and adjust ingredients if needed.
  2. Add broccoli slaw to the dressing and toss until well coated. Set in fridge to chill until plating. (You can also eat this immediately if you're not making the other elements.)
Make the Crema
  1. Combine all ingredients into a blender and blend until smooth and creamy.
  2. Sauce should be pourable, so if it's too thick, add a tablespoon of hot water at a time until it reaches the right consistency. Set aside.
Make the Chicken Thighs
  1. Combine all spices in a small bowl.
  2. Pat chicken thighs dry, then evenly sprinkle spice mixture on both sides of the chicken thighs.
  3. Heat olive oil in a large pan over medium heat. When pan is hot, add chicken thighs. Cook on each side for 3-5 minutes until cooked through.
  4. To serve, add broccoli slaw to a plate, top with chicken thighs, and a drizzle (or dump) of avocado crema.
