Okay, here we go with another quick and easy dinner idea. This time it’s a sloppy banonz version of Cottage Pie, which is really just a sloppy banonz version of Shepherd’s Pie, so basically, this is drunk food. I think that’s how math works?!?

Cottage Pie, if you don’t know, is Shepherd’s Pie, but made with beef instead of lamb, because who actually cooks lamb at home on any regular basis? Okay, yes, shepherds probably, but I’m guessing you’re not a shepherd, because I think we can all agree shepherd’s aren’t looking for the easy way out on anything. Also, they’re not eating dinner anyway - they’re drinking whiskey and fucking herding sheep, like, what do you not get about sheep herding?!?!

If you missed the first part of this series, check out my post from last week kicking this thing off. Or don’t. I mean, it’s not like it’s hard to figure out what the fuck is going on: you’re busy, your family is ungrateful, and it’s illegal not to feed them. HERE WE ARE.

 
 

As you’d expect, this actually is a quick and easy dinner. I simplified the potato portion by roasting them instead of mashing them. Technically, roasting the potatoes might take as long to prepare, but they’re fully hands off by comparison, so it’s easier. You could also prepare the potatoes in advance and then reheat them that evening. In fact, cooking potatoes in advance, letting them cool, and then reheating them later to eat reduce their glucose levels, thereby reducing the glucose spike in your blood. If you care.

Ground meat cooks quick, so you can get this on the table super quick if you just stick to protein (feel free to swap beef for ground chicken or turkey, or even beans if you’re some weird vegan), but if you can muster a few extra minutes, you can add some veggies to the mixture to get a little more fiber in the meal. I included carrots and yellow squash in mine, but you could easily swap those for peas, spinach, broccoli, cauliflower, or *shudder* eggplant. Are there other vegetables to name? Use those too! I can’t believe I’m even taking credit for this as a “recipe.” But…content is content!

Ingredients

Instructions

  1. Preheat oven to 425F.
  2. Line a baking sheet with foil. Toss potatoes with olive oil, rosemary, a big pinch of salt, and pepper. Spread evenly onto prepared baking sheet and place in oven for 15-20 minutes, until potatoes are fork tender and golden.
  3. Place beef and liver in a large saute pan over medium high heat and brown.
  4. When meat is almost cooked through, add onion, carrots, squash, and scallions and stir occasionally until veggies are softened.
  5. Add ketchup and Worcestershire sauce. Stir until well combined. Give it a taste and add salt (if needed).
  6. To serve, add roasted potatoes to a bowl and top with the meat and eat hot.
